A potter needs a lot of space. On a Stick wheel I could produce about 200 pots a day. These need to dry, get fired in a kiln and they need to be sold. But the first and foremost thing a pottery needs is clay.
Historically you would find potteries near the clay and near a river for transportation of the finished goods. A nice forest is also a plus, because kilns need a lot of fuel. The potters wheels are very heavy so they would not be portable.
For markets and events, that is of obviously not always achievable. therefore I have made a Viking A-frame market stall to show of my wares, give throwing demonstrations and sleep when the audience is gone...
